Foodie Friday: “Guys in the Kitchen.” {Recipe: Cinnamon Roll Cake}

{Today Iowa City Moms Blog is starting a new series entitled Foodie Friday. We’re starting off the series with a recipe prepared by Gabe Claussen, the husband of our lovely contributor, Tara. Why? So, I am not saying my wife is a procrastinator…actually that’s exactly what I’m saying.  I got home from work Tuesday night around 8:30, like any other night, and sat down to watch Netflix with my wife. Around 10:30 or so, Tara looked at me and says, “BTW, I need you to cook something for a blog post by tomorrow morning.”   WHAT!?!?  If any of you know me, you would know I am not an early riser. But, I told her I would do it because I really don’t mind cooking, I guess.  I go to sleep and next thing I know I am woken up early by the dreadful sound of my alarm. Did I mention I am not a morning person? So I get up, shower, and get dressed, and just as I’m sitting down on the couch to relax before I leave for work – I’m reminded by Tara that I still have to bake something.  Now the problem with this is that I tend to make A LOT of messes when I cook and I already had my work clothes on. (Another thing about me is if I don’t want to do something I will do EVERYTHING I can to get out of it.) I thought that since I was wearing my dress attire I could get away with not doing it.  NOPE!  Tara throws my kid’s Lowes tool-apron at me and says, “Get to it.”  Long story short, I whipped up some cinnamon thing that I “hand picked” out of a recipe book (wink, wink) and stuck it in the oven before I left for work. I’ve been told that they taste great, but I’m sure that my kids *cough* wife *cough* will have devoured them by the time I get home to try them. 🙂

Cinnamon Roll Cake

  • 3 c. flour
  • 1/4 tsp. salt
  • 1 c. sugar
  • 4 tsp. baking powder
  • 1 1/2 c. milk
  • 2 eggs
  • 2 tsp. vanilla
  • 1/2 c. butter, melted

Preheat oven to 350. Mix everything together except for the butter. Slowly stir in the melted butter and pour into a greased 9×13 pan.

Topping:

  • 1 c. butter, softened
  • 1 c. brown sugar
  • 2 Tbsp. flour
  • 1 Tbsp. cinnamon

For the topping, mix all the ingredients together until well combined. Drop evenly over the cake batter and swirl with a knife. Bake at 350 for 28-32 minutes.

Glaze:

  • 2 c. powdered sugar
  • 5 Tbsp. milk
  • 1 tsp. vanilla

While warm, drizzle the glaze over the cake. Eat, and Enjoy!
