Egg-cellent and Easy Easter Lunch – Keeping the Lunch Box Simple

For three years I spent most weekday mornings putting together edible works of art for my daughter to demolish at lunchtime. I was (and sometimes still am) ‘that mom’ – the one you will claim has too much time on her hands. The truth is, this morning routine was something I looked forward to. Filling my daughter’s lunch box with beautiful food presentations served as my daily creative therapy.

Then, this year something happened that changed it all. The bell schedule changed and the school day began almost an hour earlier than before. No amount of creative aspiration could motivate me to get out of bed earlier than necessary. The result? Very few edible masterpieces and many more mornings spent trying to convince my 3rd grader she would actually enjoy the hot lunch entrée.

However, whenever special events or holidays roll around I still have the urge to make something fun for lunch. Although I don’t have much time in the morning, I do have an abundance of plastic eggs around the house.

So, whether you’re an aspiring food artist or a lazy morning mom, you can impress your kids with an Easter Egg Hunt lunch.

Easter Egg Hunt Lunch

This is as simple as it comes; just choose one food from eachgroup and cut/shape them to fit in plastic eggs. For your big eaters try the larger eggs or throw in some extras. Easy for you and magical for your kids!

Don’t forget the drink! Throw in a silly straw, paper straw, or magic milk straw to make that carton of milk a little more fun.

This is also great for picky eaters. Having bite-size food that isn’t touching is ideal. Try to pick some foods that still go together. 

Pasta wheels and meatballs make the perfect pair!
