Keto With a Sweet Tooth: My 5 Favorite Low Carb, Low Sugar Desserts!

So by now you probably have a friend, family member, or someone on your newsfeed following a keto lifestyle. Low-carb, low-sugar, and high-fat seems to be a craze that’s catching on! (Apparently even one of the Jersey Shore cast members is keto?!) Anyway, a few months back I shared a bit about keto and why I’ve decided it’s the best lifestyle for me, so now it is time for me to share a few of my favorite recipes.

I love, love, love keto food. It is so delicious and really, I can’t say that I miss bread all that much. You know what I do miss? Sugar. All. The. Sugar. The cupcakes, the cookies, the cupcakes, the muffins. Did I mention cupcakes?

So I decided that I needed to find a way to satisfy my sweet tooth in a keto-friendly way. To my surprise, finding delicious keto desserts wasn’t too hard!

The key, for me, is a natural, plant-based sugar alternative called Swerve. Swerve is similar to Stevia, but I’ve found that Stevia can have a bit of an aftertaste. Plus Swerve measures the same as sugar, so it’s simple to take your favorite recipe and make it sugar-free! Without further ado, here are my favorite low-carb, low-sugar desserts!


1. Chocolate Chip Cookies

Just like “real” chocolate chip cookies, I had to hide these from myself so I didn’t eat the whole batch in one sitting!

2. Berry Muffins/Chocolate Chip Muffins

I love this recipe because it’s so versatile! I didn’t have blueberries on hand, so I used fresh: 1/4 cup strawberries and 1/4 cup blackberries. The next time I made them, I used Lily’s Stevia Sweetened Chocolate Chips to make chocolate chip muffins! I add 1 tsp of vanilla extract and it makes these muffins even yummier!

4. No-Churn Strawberry Ice Cream

This one just recently came into my life and I am hooked. The only downside is it freezes solid so I recommend freezing in individual servings so you can take one out and let it thaw a bit before eating! Or you can microwave an individual serving on low power if you’re super impatient like me! 

Ingredients

12 ounces strawberries (fresh or frozen and thawed)
1/2 cup powdered Swerve, divided
1 1/2 cups full-fat sour cream
1 teaspoon vanilla extract
1 1/2 cups heavy cream

Instructions

  1. Place the strawberries and 1/4 cup of the sweetener in a blender or food processor. Blend until almost pureed but some chunks remain. 
  2. In a large bowl, whisk together the sour cream, vanilla extract, and strawberry mixture until thoroughly combined. 
  3. In another large bowl, whip the cream with the remaining 1/4 cup of sweetener until it hold stiff peaks. Gently fold the whipped cream into the strawberry mixture until just a few streaks remain. 
  4. Transfer to an airtight container and freeze until firm, at least 6 hours.

5. Lemon Loaf

I love having a slice of this with my coffee in the morning when I am craving a donut. This is another versatile recipe, so don’t be afraid to play around with the extract flavors! My favorite is subbing almond extract for the lemon!

I think it is important to know that you can take your favorite recipes and make them sugar-free and low-carb by simply replacing granulated sugar and white flour ingredients like Swerve and almond flour or coconut flour. These sweet treats have been life savers for me over the past six months, and I really hope you enjoy them, too!
