One of the simplest and most nostalgic traditions of summer is the classic red, white, and blue Bomb Pop. While we are reminded daily of the divisiveness in our nation, most of us can come together and agree that the sweet refreshing Bomb Pop brings us back to a simpler time. Never underestimate the power of sharing these simple joys with our children.
For my family, it’s not just a treat one day during the summer. We love our ice cream and popsicles ALL. THE. TIME. Plus, it has been hot. Like… REALLLLLY hot. I’m not about to complain about our recent heat given the fact that we had a never ending winter. So, instead of complaining, I decided to come up with a patriotic sweet treat that helps us beat the heat and doesn’t give me a single ounce of mom guilt if I feed it to my kids any time of day.
For my take on a fresh fruit ‘bomb pop’, you only need three ingredients: (frozen) bananas, (frozen) strawberries, and (frozen) blueberries. You can usually find push pop molds at local craft stores or order them here.
I buy frozen strawberries and blueberries, but you can simply freeze fresh berries over night. For the bananas, peel them and break them into chunks before freezing.
Using a food processor, blend the frozen fruit until it becomes creamy and the consistency of soft serve ice cream. This may take a few minutes of scraping down the sides.
I prefer using piping bags to fill the push pop containers, but you could scoop the frozen puree into layers with a spoon. After filling your push pops, put the lid on and freeze a minimum of 4 hours.
